Hayma Dakhiliya, where this coffee takes its name from, tells a tale of timeless connection and quiet devotion. For over three centuries, local farming families have tended to their coffee trees with meticulous care, preserving the sanctity of tradition. Today, it is home to 400 coffee farming families scattered among 11 nearly inaccessible mountaintop villages. The Qima team collects coffee cherries from these farmers' hands and processes them to the highest standards. With anaerobic processing, the cherries undergo two rounds of fermentation in controlled temperatures, truly unveiling the flavour complexities intrinsic to this renowned region.
